Tofu Egg Stir-fry

Tofu Egg Stir-fry Recipe

This simple yet delicious tofu egg stir-fry recipe combines soft tofu and savory eggs, making it a quick and easy side dish perfect for busy days.

Ingredients

  • 1 block of tofu (for stew)
  • 3 eggs
  • 3 tablespoons oyster sauce
  • 1 tablespoon sugar
  • 1 tablespoon cooking wine
  • 1 tablespoon soy sauce
  • 1 tablespoon starch
  • 1/2 onion
  • 1/2 green bell pepper
  • 1/2 red bell pepper
  • A small amount of green onion (white part)
  • 2 green chili peppers
  • 1 tablespoon minced garlic
  • 6 tablespoons cooking oil
  • 200 ml water

Instructions

  1. Prepare the egg mixture: Crack 3 eggs into a bowl and whisk them to make the egg mixture.
  2. Cut the tofu: Cut the tofu into small rectangular pieces by slicing it into 4 horizontal and 6 vertical sections.
  3. Chop the vegetables: Finely chop 1/2 an onion, 1/2 a green bell pepper, and 1/2 a red bell pepper. Slice 2 green chili peppers thinly, and chop the white part of the green onion into small pieces.
  4. Make the sauce: In a bowl, combine 200 ml of water, 3 tablespoons of oyster sauce, 1 tablespoon of sugar, 1 tablespoon of cooking wine, and 1 tablespoon of soy sauce. Stir well, then add 1 tablespoon of starch and mix until smooth.
  5. Coat the tofu with egg: Pour 1/3 of the egg mixture over the tofu and gently toss to coat. This will help the tofu absorb more flavor while stir-frying.
  6. Stir-fry the tofu and eggs: Heat 3 tablespoons of cooking oil in a pan. Once hot, add the tofu and lightly fry it. Pour the remaining egg mixture into the pan and stir gently with a wooden spatula while cooking.
  7. Stir-fry the vegetables: In the same pan, heat another 3 tablespoons of cooking oil. Add the chopped green onion, green chili peppers, and 1 tablespoon of minced garlic. Stir-fry until fragrant, then add the chopped onion, green bell pepper, and red bell pepper. Lightly stir-fry until the vegetables are tender.
  8. Add the sauce: Stir the prepared sauce and pour it into the pan. Let it simmer until the sauce thickens. Then, add the tofu egg mixture back into the pan and gently toss everything together.
  9. Serve: Once the ingredients are well combined, transfer them to a plate and enjoy your delicious tofu egg stir-fry!
